Recipes Wanted

Some friends gave us an assortment of dried fruit. We have prunes, two kinds of figs, cherries, and sweetened cranberries.

I've been thinking about tackling the cranberries for Thanksgiving but I've never done it before. My mom opened cans and so do I.

I've been googling recipes but thought I'd ask my cooking buddies who live in my computer.

Anyone have a good recipe for whole berry cranberry sauce or relish? With or without other fruit; that doesn't matter. I've found a couple with orange that look interesting but they call for cinnamon and that sounds a little odd. Beside, I'm using cinnamon in some other things and it might be too many spices for one meal (counting the desserts of course).

Any ideas?

A friend's mother gave me this simple cranberry relish recipe a few years ago.

It is excellent chilled and so easy--just oranges, cranberries and sugar!

I would just grind the cranberries and a fresh orange with a little sugar to make a relish. As for the dried fruit, stew and simmer it into a delicious compote, mmmm...

This is the way I make my cranberry sauce.....Bring to boil 1 cup water and 1 cup sugar...add 12 oz fresh or frozen cranberries and simmer for 15 minutes. Chill. It comes out just like in the cans!!

Mmmm... cranberries. I have never made homeade cranberry dishes before (I am the only who likes them) but this is tempting me...

We can buy cranberries ... dried like sultanas ... called Craisins, and I just sprinkle them through a green salad, with lettuce, tomatoes, spring onions (shallots), cucumber, capsicum (bell peppers), grated cheese, mushrooms, and anything else. Yummy !!

I have one that I do each year, traditionally. My family loves it.
Altho, I use canned 'whole' cranberries with my recipe. (But you can make your own cranberry sauce by doing it just like you would do fresh cherries for a pie filling. Cranberries in a pan -just a hint of water. Sugar to sweeten, and cook over medium heat until the berries soften and 'pop' open! You can thicken if needed with cornstarch)

I have never written it down into a recipe, per se....but this is how I do it.

Chopped celery (washed, cleaned - about 1 cup)
Miniature marshmallows (about 1/2 bag)
One small bag walnuts
1 can whole cranberry sauce
1 lg. package cherry flavored jello.
1 tart apple (red with skin, cut up...then washed in a lemon wash to keep fruit from browning)

Make jello according to package directions ..cool 'til it begins to thicken. When chilled add all the ingredients into the jello and re-refrigerate 'til fully set!

It has a great texture, it's a great complimentary flavor to a tradtional turkey meal. Tart, sweet and full-bodied.


Also, with dried cranberries and leftover turkey I make turkey salad for sandwiches.

mayonaise to coat above 3 ingredients.g

Also, you can throw a handful of dried cranberries into cookies. I like them in oatmeal-chocolate chip personally. White chocolate chips work well with cranberries. :)
