Food from across the pond

From ipodmama (Mollie) who devoted most of a post to caramel brownies without the recipe. I wept. Here's the recipe. Yum

okay, so the actual recipe is for a 9X13 pan... but this made for the square 9" or 8" size... I'll give the one I made, and if you want the bigger one, just ask...oh, the one thing I did not reduce was the amount of unsweetened chocolate... I used the 4 squares the big recipe called for... and it was just fine...

Preheat oven to 350°

4 squares unsweetened chocolate

1 stick plus 1-2 TBS butter

1 1/2 cups sugar

3 eggs

3/4 cup flour

3/4 cup chopped nuts... I used pecans

23 caramels, unwrapped (the entire recipe calls for that many, but it seemed to work just fine for a reduced size... but we like caramel) (unwrapped huh? Ann)

2 TBS milk

12 oz. bag of semi sweet chocolate chunks...

preheat oven to 350 F.

line a 8 or 9" square pan with foil, with ends extending over sides of handles. spray with Pam spray, or use butter or grease.

place unsweetened choc and butter in large micro bowl, and nuke on high 2 minutes or till butter is melted. stir until chocolate is completley melted.

add sugar; mix well.

blend in eggs. add flour, mix well.

Stir in nuts, and spead into prepared pan.bake 30-35 minutes, or until tester comes out with fudgy crumbs.

meanwhile... place caramels and milk in micro bowl and nuke on high 2 minutes, stirring after 1 minute. stir until caramels are completely melted and mixture is well blended.

gently spread over cooked brownie in pan. sprinkle with desired amount of chocolate chunks.

cool in pan on wire rack. using foil handles, lift brownies from pan.

cut into squares.

store in tightly covered container at room temp.

Elcie's home sick today. She was feeling bad last night and still this morning. I sent her to school due to my ongoing battle about attendance with the school (not solved yet) and less than an hour later, the school called to come get her. It would be so nice if the school would trust me to know when she's sick but their attitude is and I quote "unless they're dying, they should be here". They want the money they receive for the number of kids present at roll call.

More later on history of attendance battle. I have brought in the big guns which should solve the problem. It's my last resort when some automaton in the bureaucracy refuses to listen. I'd much rather not take that step but her advocate speaks with the voice of authority.

Mary P. talked about "earnest" parents and I laughed and then cringed. I hope I'm never that but I'm not going to let the school operate against Elcie's best interests and treat me like an idiot either. It's a balancing act all the time with disabled kids and IEP's.

I'm feeling better but still not 100% so I'm going to lie down while I have the chance.

Good for you for getting the big guns out!
No one could ever call me an earnest parent - I think they actually called me "bitch".
Sadly that is what happens a lot of the time when you don't roll over and let them do the wrong things.
Her advocate sounds interesting.
