Sheri (Life Here) and rice pudding

I just went through bloglines beginning with my friends who live in Japan because that was the one thing I was sure of. At least I got that right. It looks like my mom's recipe, what I remember of it. I love rice pudding and have never had much luck with improvising.

Rice pudding (taken from Christine Cushing?-not sure about the last name-anyway, it came from the milk calendar 2 or 3 years back.)

3 cups of milk (in Japan I mixed whole milk with low fat)
1 cup of cream (in Canada I used the stuff to put in coffee 1/2 and 1/2)
1/2 cup of short-grain rice (Arborio or Italian, japanese rice works well)
1/4 cup of brown sugar (it says packed, but I like a little less, so I don't pack it in too much)
1/2 tsp of cinnamon
1/4 tsp of salt
1/4 cup of raisins
1 Tbsp of vanilla

1. Bring milk, cream, rice, sugar, cinnamon, and salt to a boil over medium heat, stiring frequently.
2. Reduce heat to low. Cover and simmer for about 20 min, stirring occasionally.
3. Add raisins. Cover and simmer for another 5-10 min, (until the rice is tender)stirring occasionally.
4. Add vanilla. Serve warm or cold. Makes 4 to 6 servings.

I'm including a link to her post (click on the post title) as well bcause she includes a receipe for perogy (peroshki?) Same thing? It's in narrative form and easier to read there than to copy. Besides, she has neat stories about life with her family.

Thanks Sheri and my face is red. A child must have barfed about the time my browser decided to do the same thing (figuratively) and I lost track. At least I remembered Japan which narrowed the field somewhat.

Thank Granny...Evan loves rice pudding. Mabye I will have some made for him when he comes back from rehab. Yes...I said "when"!

Mum will love the recipe. Not to fond of rice pudding myself, but I'll see if I can whip some up for her soon.

So, THAT'S what pinkeye is! You're right. Much easier to both say and spell.

Good luck with the conference and the IEP (another dense and probably "it's OBVIOUS" question, but what IS I.E.P?) - hope Elcie has a good day, despite having school. Dinner sounds like a great idea. The fact that she will be a teenager does not. Any chance you can freeze time and stop it from happening?

Perogi are polish dumplings, kind of like ravioli, although usually served with only butter rather than a sauce, iirc. My mother was big on these; there is a very good polish restaurant right near here.

Piroshki is different... it's a russian all-in-one meal, perhaps like a meat pie in England? (Alice? Sweeney Todd?) Think of a jelly donut, only a little bigger, oval shaped and savoury rather than sweet dough and stuffed with potatoes, meat, cheese, and/or veggies. I used to live on these when I was younger. You can find them in a lot of delis (bought from a wholesale maker and reheated) around here.

Here's a place with pictures of piroskis, as I know them -- actually from the place we used to buy them from (when we bought a lot) and that services most of the delis in and around SF.

Piroshkis have a thicker, more bread-y outer than perogies, which are more like raviolis or wontons. One piroshki will be a meal or main dish for most people (A really hearty eater could maybe eat two); a meal of perogies would be a whole plate full.
