Elusive Breakfast Rice (no raisins)

I think Tina, formerly of Prague and now back home in Colorado, and I are starcrossed. First it took me six months to post a photo of the lovely necklace she sent me from Prague. Then I confused her with Katie K. of Bosphorus Ramblings. I do know that the Czech Republic and Turkey aren't the same country. Finally I forgot who posted the Breakfast Rice recipe and compounded the error by insisting it has raisins. It doesn't although I'd probably throw a few in anyhow.

Here, from Tina, is the recipe. Too late for Five Ingredient Friday but I'm going to try it. My girls love cold rice.

Actually, I eat this at all hours of the day. Soy yogurt makes it vegan-friendly. Use whatever quantities you like, depending on your preferences and how many you're feeding.

Cold cooked rice
Yogurt (any flavor; my favorite is vanilla)
Chunked fresh fruit (anything you like or have on hand. I like nectarines best)
Chopped nuts (any kind!)

Mix and enjoy. It's sort of like a breakfast rice pudding. The rice has this great chewy texture that I love, and the fruit and yogurt are sweet and the nuts add a little bit of crunch. I could eat it for every meal in hot weather.

I could never eat cold rice.

But I bet the boys would love it. I'll have to try it out.

I can make it with rice, yogurt, and the fresh peaches I picked up at the produce stand this afternoon...if I don't eat them all first. :)

This sounds delish. It would have been perfect for 5 ingred Fri. Do you have Trader Joes? Their vanilla yogurt is the best! (I buy the fat free)

Yummmm it does sound good and I've written down the recipe. My mom used to make Rice Pudding with raisins in it and we used to eat every last bit of it, it was so good. Thanks for sharing the recipe!

Thanks, G! I'm excited for this 'recipe' to get around. It's SO good. I wasn't kidding when I said I could eat it for every meal!

Uhm, I'll take all of your words for it that it's good but I could never eat cold rice either. You must let me know how it goes when you make it.
