The Best Laid Plans, etc.

My friend emailed me last night that he and his family have the flu. No barbecue for us. Hope they're feeling better soon. It's much more of a bummer for them than for us.

Here's the comment I left for Diane on her Sunday Dinner post:

Our plans fell through (friends have the flu) so I'm scrambling to get a late dinner on the table. Luckily I have a canned ham and boxes and cans of stuff since I have no time to prepare much from scratch, do laundry, mop the floor, take a shower, - whew!! Oh, and put on clean clothes - that might be appropriate. I invited Tim - he's working but he'll come by around six.

So - ham, sweet potato casserole, scalloped potatoes au gratin, deviled eggs, Bush's baked beans, three bean salad, honey glazed carrots, sourdough bread, and banana pudding.

I didn't even have to go the store.

Wish me luck - I'm going to need it.

Ray just left for church and I'm taking ten minutes to sit down while the eggs are cooling. I put on a CD - Rachmaninoff Piano Concerto #2 and Grieg Piano Concerto in A Minor. If that doesn't keep me enthused, I'll switch over to Beethoven - or perhaps Sousa marches.

Happy Easter everyone.

I'm sure you are enjoying your concert even though it must be a bit of a trial to have to make a last-minute dinner (which you seem to be good at doing, however).

Good Afternoon Granny,
"HAPPY EASTER" to you and your Family. I'm sorry your plans fell thru for dinner today, but hopefully your friends will be feeling better soon. Sounds like you have a wonderful menu that you can fix in no time and the best thing is you have everything without having to go to the store. I didn't cook today. It was just me and the girls. Our youngest daughter went to Church this morning. Me and our oldest daughter wasn't feeling too good, so we stayed home. My Mom had called when they got out of Church and said the girls had left some things at their house and they were going to bring it up to them. They also brought us some Fried Chicken and some potato salad. That's what me and the girls had for our lunch. I'm sure your CD you put in to listen to has kept you enthused. Yes, parts of Arkansas has been hit really hard this year with tornadoes and floods. We have been lucky here where we live at tho. It's going to be a long road of recovery for them all. Take care my friend and have a great Easter. May God Bless You and Yours.

Love & Hugs,
Karen H.

Good grief, Ann! Your meal is a monumental effort even by my big family's standards.

I ended up with a steak, baked potato and salad. Not the best I ever had, but I didn't have to cook it or clean up afterwards so it fit the bill quite nicely.

Hope y'all had a great Easter meal and shin dig.

Love and hugs,

Diane

Happy belated Easter!

Sounded like it came together anyway! Good job!

Can't imagine that all of that was just lurking around in your pantry!!

Granny,

I hope you had a lovely Easter. It was nice visiting with you again. Yes, Mom does all the cooking and wouldn't have it any other way. That is the old tradition. The matriarch was hostess for holiday meals.

Blessings,
Mary

I'm blown away at how much you have in your pantry, and what a feast you can throw together at the last minute! I'm afraid if that were here, we'd be having toast and popcorn for Easter dinner, ala' Charlie Brown Thanksgiving. :)

Granny, you have more energy than I do and I am younger than you..lol Too bad that your friends ended up sick. My daughter and her husband and the two grandkids were supposed to come over for dinner and they were down with a cold too. My son and oldest daughter were here to eat with us.

I cooked a ham, steamed aspargus, sweet potato cassarole, tossed salad, deviled eggs and some stuffed peppers. I also had some french bread and a chocolate cake for desert...I did have to clean up afterwards.

This morning I woke up to a refrigator that wasn't cooling. There was water in the ice ben and things in the freezer were thawing. I ended up having to go buy a new refrigator. They won't be able to deliver it till Wednesday afternoon, so I have five ice chests full of frig food...What a mess. Just last week I paid off my freezer and dish washer that conked out last summer...lol. I was out of debt for less than a week. Oh well, if it's not one thing, it's another.... Have a good week Ann.

Happy Easter, I hope you had a good time. Sorry your friends are ill. The flu has been going around here too. It is just a little late this year.

I thinking wishing you luck in this stage of the game is a little late.
But I bet everything was great and it all worked out in the wash.
