Muffins from madcap mum
Morning Glory Muffins
Heat oven to 350F degrees (325F for gluten-free)
2 c. flour (if you're doing this gluten-free, 1 c. rice flour, 1 c. tapioca starch, and 1 pckg clear Knox gelatin).
1 c. sugar, brown or white (this was 1 1/4 c. in the original recipe, but I knocked it down, and I think it could easily be knocked down again.)
2 tsp baking soda
2 tsp cinnamon
1/2 tsp. salt
2 c. grated carrots
large handful of raisins
large handful of coconut
1 apple, grated
3 eggs
3/4 c. cooking oil
2 tsp vanilla
Mix the first 5 ingredients in a large bowl. Add the next 4 ingredients to the dry mixture and combine. Mix the last 3 ingredients in a separate bowl. Stir egg mixture into flour mixture until just combined. Spoon into well-greased muffin cups, filling to the top. Bake for 25-30 minutes (or thereabouts). Makes about 16 muffins.
